Lea Sauces MeatloavesIngredients:
25-30 lbs ground beef (regular, or thick slices)(about 3+ lbs per loaf)
4 (12 oz) pkgs bacon (or, bacon bits as garnish)
1 (#10) can tomato sauce
4 med onions, diced
3 green peppers, diced
1 red pepper, diced
1 stalk celery, diced
1 doz eggs
2 loaves bread, crumbed (or, two boxed saltine crackers, crushed)
2 pkg carrots, julienned
Salt and Pepper, to taste
1 bunch parsley
Brown gravy mix for optional gravy, or tomato catsup, or sweet sauce topping

For An Optional Sweet Glaze/Topping:
1 cup catsup or ketchup
1 cup maple syrup, or brown sugar, or honey
1/2 cup Dijon or other salad mustard
1/8 Worcestershire sauce


1. Whip eggs at moderate speed in mixer bowl for 1/2 minute.
2. Add beef, tomato sauce, salt, pepper, chopped onions & bread crumbs to egg mixture.
3. Mix to combine. Do not over mix.
4. Shape into 8 equal loaves.
5. Place loaves on lightly greased hotel pans. Top with tomato sauce, bacon strips arranged for 1 slice per serving, and bake 1 3/4 to 2 hours or until browned and firm. (Internal temp should reach 165º F.
6. Remove from oven and let loaves rest 10 to 15 minutes, and then slice.

Lea Mixing Meatloaves If you have the option, try combining equal amounts of chuck, sirloin and pork, which really delivers on meaty flavor for a wonderfully tasty meal. We also have an Italian flavored version if you want to make it a bit more festive. To create eye-appeal for for children, try baking in mini-loaf pans, or shape individual meatloaves in greased coffee cups or ramekins, and invert the cup to dump the meatloaves onto sheet pans. Plate on top of a scoop of the sauce, instead of topping the meatloaf with it, and top with colorful shredded cheeses to capture their interest.
