This is a ground beef and pork-and-bean casserole with a BBQ flavor. Serve with cornbread.
Serves 80
Ingredients:
15 pounds ground beef, browned
2 pounds bacon, chopped, fried, drained
2 (#10 cans) baked beans with pork
1 (#10 can) French fried onions
6 cups ketchup
2-1/2 cups molasses
1/4 cup dry mustard
4 large onions, chopped
12 large green bell peppers, chopped
1/4 cup kosher salt
1/4 cup ground black pepper
Directions:
1. Mix together ketchup, molasses, mustard, pork and beans, salt, and pepper.
2. Sautee onions and bell pepper, then add to the seasoning pot.
3. Brown the beef, and stir into the seasoning pot.
4. Cover, and cook on high heat for 1 hour, or until pot boils.
5. Ladle contents into two hotel pans. Sprinkle French fried onions to cover.
6. Cover the pans with foil and bake at 300 for 2 hours.
7. Uncover and bake 30 minutes before serving.

Kathy, we have used a single deep hotel pan for a juicier casserole, and have split it between two shallow pans to get a little drier casserole with a crispy crust. Both work well, and is worth trying both approaches to pick your favorite. Thanks for the inquiry. Enjoy!
