Baked Taco CasseroleIngredients:
6 pounds lean ground beef
3 large onions, chopped (about 3 cups)
6 (1 oz) pkgs taco seasoning mix
6 (16 oz) cans tomato sauce
12 cups shredded cheddar cheese (16 oz)
12 cups biscuit mix
12 cups milk
1 doz eggs
1 stick (8 oz) butter
Sides:
6 cups (12 medium) Roma tomatos, diced
3 cups fresh cilantro or parsley leaves
3 cups shredded lettuce
2 large containers sour cream

Directions:
1. Preheat oven to 325 degrees F
2. Grease 2 deep hotel pans
3. Divide and melt butter in 2 14-inch skillets or a hotel pan positioned over two burners. Add onion and cook uncovered until translucent, stirring frequently.
4. Add Ground beef to the onions and cook until beef is brown. Drain and discard the liquid.
5. Stir in dry seasoning mix and tomato sauce. Spoon into pan;
6. In a separate bowl, stir Bisquick mix, milk, and eggs until smooth. Pour over the beef mixture.
7. Sprinkle evenly with cheese.
8. Bake about 55 minutes or until knife inserted in center comes out clean. Cool 10 minutes before cutting. Garnish lightly with cilantro/parsley and serve with optional sides.
